The base absorbs water, preventing frictional heat buildup. This prevents the whetstone from drying out, making sharpening easier and easier to handle.
The base catches sharpening juice, preventing a mess in the kitchen.
The underside of the base has a non-slip surface for easy use.
After cleaning, place the whetstone back on the base to drain and dry.
This double-sided whetstone is available as a coarse and medium whetstone.
[Preparation before sharpening]
1. Soak the whetstone thoroughly in water (5-6 minutes).
2. Place the water-filled base on a flat surface and place the whetstone on it.
[How to sharpen] (Normal knife care)
1. Place the medium whetstone on the base with the top facing up.
Angle viewed from the side... Place the whetstone on a flat surface and maintain a constant angle of about 15° (the width of a chopstick).
2. Hold the handle of the knife firmly and sharpen with your left hand on the blade.
3. Turn the knife over and sharpen it the same number of times as on the front, at the same angle.
4. As you sharpen, a burr will form on the edge of the blade.
5. Once the burr has formed, turn the blade over again (the side with the burr) and sharpen it gently several times, removing the burr.
Once the burr is removed, the blade is ready to be sharpened. *Occasionally sprinkle a small amount of water on the whetstone while sharpening.
[How to sharpen a knife with a nick]
If the knife has a nick on the edge, start by sharpening it with a coarse whetstone.
I. Place the knife on the stand with the coarse whetstone facing up and sharpen it using steps 2 and 3 of the "sharpening method" above.
II. Place the knife on the stand with the medium whetstone facing up and sharpen it as described in the "regular care" section above.
[Blade types]
Double-edged: Sharpen the front and back of the blade an equal number of times, maintaining the same angle.
Single-edged: Sharpen the front of the blade 20 times and the back of the blade 3 times, maintaining the same angle.
