Ceramic knife using new material "Z212"
"Light, sharp, and clean-cutting ceramic knife"
Kyocera, the pioneer of ceramic knives, developed the new patented high-hardness material "Z212" after more than 10 years of research. By using this material for the blade, the abrasion resistance (resistance to friction) against food ingredients has been improved, and the sharpness has been successfully maintained for more than twice as long as conventional products.

Kyocera Corporation
Kyocera was founded in 1959 by founder Kazuo Inamori as "Kyoto Ceramic Co., Ltd." As a manufacturer specializing in fine ceramics, we are engaged in a wide range of businesses, including semiconductors, electronic components, and solar.
We wanted fine ceramics, which had previously been limited to industrial use, to be used by the general public, so in 1984 we commercialized the first ceramic knife, an everyday item, in Japan.
What are fine ceramics?
Unlike ceramics used in pottery and other "baked" products, Kyocera's fine ceramics are materials that are given new functions and characteristics by refining the raw materials, removing impurities, and precisely controlling the composition and molecular structure. The raw materials that Kyocera developed exclusively for knives are hard and flexible (high toughness), and are characterized by both sustained sharpness and resistance to chipping.
Kyocera's unique blade shape
◆Tip R shape
The design disperses the impact when hit, making it less likely to chip or break.
◆Clamshell processing
The blade tip is sharpened with a blade called a clamshell blade, which is durable and less likely to chip, and improves the durability of the sharpness. It also makes it easier to cut through ingredients.
Hand-sharpened blade
The final sharpening process is an important step that breathes life into the knife and shows Kyocera's high quality. This process is carefully completed one by one by skilled craftsmen who are certified according to Kyocera's internal standards.
・[Ceramic knife that is light, sharp, and cuts cleanly] Ceramic knives have long-lasting sharpness.
・Because it does not give off any metal, the ingredients are less likely to discolor and maintain their original taste.
・In addition, it is rust-free and easy to clean as it can be washed in the dishwasher and sterilized by bleaching.
・[For long-term use] Ceramics are not metal. Avoid dropping it into the sink or twisting it sideways when cutting.
・ Also, do not use it on hard foods such as pumpkin, frozen foods (semi-thawed foods), rice cakes, bone-in meat and fish, crab, corn, and fruit seeds.
・The blade may chip or break
